Requires honey to contain no added food ingredients or additives other than honey, with prohibited fermentation, off-flavors, or foreign matter contamination.

Sets specific chemical standards including maximum 20 percent moisture content (23 percent for heather honey), minimum 60 percent combined fructose and glucose (45 percent for honeydew honey), and maximum sucrose percentages varying by plant source.

Prohibits excessive heating, chemical crystallization treatments, and limits water insoluble solids to 0.1g/100g for most honey and 0.5g/100g for pressed honey.

Violations of honey standards constitute crimes under existing law; provides no state reimbursement to local agencies for enforcement costs.
