HB 25-1295: Food Truck Operations

• Establishes statewide reciprocity for fire safety permits, allowing mobile food establishments with a valid permit from one Colorado jurisdiction to operate in any other jurisdiction without obtaining additional fire safety permits
• Requires food truck operators to submit a copy of their fire safety permit to new jurisdictions at least 14 calendar days before operating there, with only one submission required per calendar year
• Creates mutual recognition between Denver retail food licenses and state health department licenses, allowing food trucks licensed in Denver to operate statewide and vice versa
• Directs the Division of Fire Prevention and Control to adopt minimum fire safety codes and standards for mobile food establishments for use by local governments
• Takes effect January 1, 2026, while preserving local governments' authority to enforce their own ordinances, zoning codes, and health codes
