Allows restaurants and catering establishments to acidify sushi rice as an alternative to temperature control, provided such acidification meets specified regulations.

Requires the Commissioner of Public Health, in consultation with the Commissioner of Consumer Protection, to adopt regulations governing acidified sushi rice by October 1, 2016.

Permits the Commissioner to implement interim policies and procedures while regulations are being finalized, with notice of intent to adopt regulations published within 20 days of implementation on the Department of Public Health website and eRegulations System.

Interim policies and procedures remain valid until formal regulations are officially adopted.

Effective October 1, 2015.
