Certified food protection managers at Class 2, 3, and 4 food establishments must successfully complete an allergen awareness training program approved by the Commissioner of Public Health.

By January 1, 2019, food establishments must include allergen awareness in staff training and establish written guidelines for interacting with customers who have food allergies.

Food establishments must develop procedures to inform customers upon request about the presence of major food allergens in menu items, effective by January 1, 2019.

Menus and menu boards must display a clear and conspicuous notice requesting customers to inform their server of any food allergies before ordering, effective by January 1, 2019.

Food establishments must retain and make available for inspection records documenting completion of allergen awareness training by their certified food protection manager.
