Designates November 22, 2023, as "Kimchi Day" in Hawaii to recognize Korean culture and the 120th anniversary of Korean immigration to the state.

Acknowledges that approximately 50,000 Hawaiian residents identify as ethnically Korean and have contributed to the state's diverse culture.

Notes that kimchi's traditional preparation method "kimjang" was recognized as intangible cultural heritage by UNESCO in 2013.

Highlights kimchi's nutritional benefits including probiotics, folate, beta-carotene, and vitamins A, C, and K, which may reduce stroke, cancer, and diabetes rates.

Directs transmission of a certified copy of the resolution to the Governor.
