Each food service establishment must operate under the supervision of a certified food service sanitation manager according to Department rules.

Beginning January 1, 2018, individuals who complete minimum 8 hours of Department-approved training and pass an exam accredited by the Conference for Food Protection are certified as food service sanitation managers or instructors.

Food service sanitation manager certificates and instructor certificates issued by exam providers are valid for 5 years and are non-transferable.

Certificates issued by the Department before January 1, 2018 remain valid until their stated expiration date.

The Department accepts only Department-approved training and certification exams accredited under Conference for Food Protection standards.
