Public schools and charter schools participating in the National School Lunch Program must offer at least one plant-based meal option daily beginning with the 2026-2027 school year, upon written request from students or their guardians

Plant-based meals must exclude all animal products including meat, poultry, fish, dairy, and eggs, and must comply with federal nutrition guidelines for school food

Schools must fulfill plant-based meal requests within four weeks of receiving them and must make information about availability and the request process readily accessible to students, parents, and guardians

Minnesota Department of Education must develop implementation guidelines, provide training resources for school nutrition teams, and monitor school compliance with authority to take action against non-compliant schools

Schools must submit annual reports to the department detailing the number of plant-based meals offered, requests received and fulfilled, and implementation challenges encountered
