Food establishments may reuse oyster shells to serve cooked shucked oysters, whether or not the oysters are served in their original shells.

Establishments must post a conspicuous, clearly legible sign advising customers that oyster shells are reused for serving cooked oysters.

Oyster shells must be boiled for a minimum of ten minutes, thoroughly dried, and stored in a covered refrigerated container on the same day the oyster is removed.

Shells must be reused within 48 hours after the oyster is removed from the shell.

The act becomes effective October 1, 2019.
