Creates the Office of Health Professional Nutrition Education within the Department of Health to assist medical schools, dental schools, physician assistant programs, and other health professional training programs in developing diet and nutrition curricula

Establishes a 15-member Health Professional Nutrition Education Council, including the commissioner and 14 governor-appointed members with expertise in public health, nutrition dietetics, lifestyle medicine, and health workforce education, with 3-year terms

Authorizes the office to establish core nutrition competencies for training programs, apply for grants, accept gifts from public and private sources, and promote nutrition education research at universities and colleges

Requires the council to meet at least twice annually, with all meetings live webcast and archived on the department's website for at least two years

Mandates triennial reports to the governor and legislature on the office's activities, status of health professional nutrition education in New York, and policy options, with the first report due by September 1, 2028
