SB 58 Summary

• Allows beekeepers whose apiaries have been inspected and certified by the Oklahoma Department of Agriculture, Food, and Forestry to sell honey without complying with Oklahoma Department of Health inspection procedures.

• Defines honey as the natural food product from nectar harvested by honeybees, consisting primarily of fructose and glucose, with specific allowed characteristics including color variation and fluid or crystallized consistency.

• Establishes content standards for sellable honey including maximum 23% moisture content, fructose-to-glucose ratio greater than 0.9, and sucrose content not exceeding 5 grams per 100 grams (with higher limits for specific floral sources like lavender and borage).

• Prohibits adding food additives or other ingredients to honey sold under this act; products with additives or modifications must be clearly labeled and cannot use the exemption from health department inspection.

• Designates three types of honey that can be sold: liquid/crystalline honey, comb honey in sealed whole combs or sections, and cut comb or chunk honey containing pieces of comb honey.
