All mobile food preparation vehicles operating in Oklahoma before July 1, 2024, that produce smoke or grease-laden vapors must comply with the most current adopted fire code, with portable fire extinguishers installed and maintained per NFPA 10 standards, except automatic fire extinguishing systems are not required.

A six-liter Class K-rated portable fire extinguisher is required for cooking equipment involving solid fuels or vegetable or animal oils and fats, with all extinguishers subject to annual inspection by a licensed contractor.

Mobile food preparation vehicles using liquefied petroleum gas must receive and maintain permits from the Oklahoma Liquefied Petroleum Gas Administration and be inspected annually by that agency in conjunction with the State Fire Marshal issuing operational permit decals.

The State Fire Marshal has jurisdiction over mobile food preparation vehicles for fire and life safety code compliance and must conduct annual inspections within each of the four state quadrants and twice in counties with populations exceeding 400,000.

State Fire Marshal rules for mobile food preparation vehicle fire and life safety codes shall have uniform statewide effect, and no political subdivisions may enact conflicting ordinances except in counties with populations exceeding 400,000; the act becomes effective November 1, 2025.
