Automatic fire extinguishing systems become optional for mobile food preparation vehicles if the vehicle has at least two portable fire extinguishers meeting NFPA 10 standards and all employees receive documented annual fire safety training approved by the State Fire Marshal

Six-liter Class K-rated portable fire extinguishers are required for cooking equipment using solid fuels, vegetable oils, or animal fats, and all extinguishers must be in clear view and immediately available

Removes the January 1, 2026 expiration date that would have required all food trucks to comply with full fire code requirements including automatic suppression systems

State Fire Marshal retains jurisdiction over fire and life safety compliance, conducts annual inspections in each of the state's four quadrants, and twice annually in counties exceeding 400,000 population
