Tony's Siesta originally opened as Tony's Bar in 1999, operated by Tony Lopez for two decades before Palacios assumed ownership in 2020 and renamed it in homage to Lopez's retirement

Atlee's Rally, a St. Paul Square sports bar co-owned by Palacios, launched during the NCAA Men's Final Four basketball tournament in April 2025 and is named for early 20th century Texas state architect Atlee B. Ayers

Palacios assists in planning community events including chili cook-offs, birthday parties, and gatherings for San Antonio's annual Fiesta celebrations
